Sweet and Tangy Vinegar Cucumber Salad

This cucumber salad is made with a sweet and tangy vinegar dressing. It’s crunchy, flavorful, and the perfect side dish for summer meals.

Ingredients

  • ¼ cup hot water
  • 3 tablespoons sugar add more or less to taste
  • ½ cup apple cider vinegar
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt
  • 2 large cucumbers, peeled and sliced thin
  • About ¼ cup chopped or sliced onion, yellow, red or sweet

Instructions

  1. In a large bowl, combine the hot water and sugar. Stir until the sugar dissolves. Add the vinegar, salt, and pepper. Stir in the cucumbers and onion.

  2. Chill for at least an hour before serving. Store leftovers in the refrigerator for up to three days.
