Easy Fluffy Pancakes

Fluffy pancakes are easy to make with simple ingredients. No buttermilk or whipped egg whites needed.

Ingredients

  • 1 cup (125 grams) flour
  • 1 tablespoon (13 grams) granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup (177 ml) milk
  • 2 large eggs
  • ¼ cup (60 ml) oil
  • ½ teaspoon vanilla extract
  • oil or nonstick cooking spray for the griddle

For Serving, optional

  • butter
  • maple syrup
  • powdered sugar
  • fresh berries
  • whipped cream

Instructions

  1. Whisk together the flour, sugar, baking powder, and salt in a medium bowl. Add the milk, eggs, oil, and vanilla extract. Stir to combine. A few lumps might remain in the batter. This is fine.

  2. Set batter aside while you heat the griddle.

    Heat a nonstick or cast iron griddle over medium heat until hot. Grease lightly with oil or nonstick cooking spray.

  3. Spoon batter, about 1/4 cup, onto the griddle. The batter should sizzle lightly when it hits the pan. Cook until bubbles appear on the surface of the pancake, about 2 to 3 minutes. Flip. Cook until set, about anouther1 to 2 minutes.

  4. Serve with syrup and butter or keep pancakes warm in a 175°F oven.
