Fluffy pancakes are easy to make with simple ingredients. No buttermilk or whipped egg whites needed.
Whisk together the flour, sugar, baking powder, and salt in a medium bowl. Add the milk, eggs, oil, and vanilla extract. Stir to combine. A few lumps might remain in the batter. This is fine.
Set batter aside while you heat the griddle.
Heat a nonstick or cast iron griddle over medium heat until hot. Grease lightly with oil or nonstick cooking spray.
Spoon batter, about ¼ cup, onto the griddle. The batter should sizzle lightly when it hits the pan. Cook until bubbles appear on the surface of the pancake, about 2 to 3 minutes. Flip. Cook until set, about another 1 to 2 minutes.
Serve with syrup and butter or keep pancakes warm in a 175°F oven.
