    Chocolate-Covered Ritz Thin Mints

    These easy-to-make no-bake cookies are made with Ritz crackers. After a quick dip in mint-flavored chocolate, the crackers transform into a thin mint-like cookie.

    Ingredients. 

    Dark Chocolate Coating Wafers. Use a good quality candy melt for these cookies. I like Merckens or Ghiridelli. Candy melts are designed to be melted and used and don’t require tempering, like traditional chocolate. If you want to use dark chocolate, add 2 teaspoons of coconut oil to help it set. 

    Peppermint Oil or Extract. For the best peppermint flavor, use a few drops of pure peppermint oil. Since it can be hard to find, I’ve also tested the recipe with peppermint extract. It’s not as strong as peppermint oil but works very well. Avoid “mint” extract. The flavor isn’t as good. 

    Ritz Crackers. You need ritz-style crackers for these cookies. The flaky richness is key. If you want to use store-brand crackers, use something labeled “buttery rounds” or “rich snack crackers.” Use regular Ritz, not flavored or low salt. 

    How to Make Mint Chocolate-Covered Ritz Cookies

    1. Melt and Flavor the Candy Coatings. You can melt the candy coatings in the microwave or in a double boiler. Don’t overheat it or the coatings can get thick. Stir in the peppermint oil or extract. 
    2. Dip. Drop the crackers into the melted coatings. Turn them to coat evenly. Remove the crackers with a fork. I like to tap them on the side of the bowl to remove excess chocolate. 
    3. Let Harden. Place the dipped crackers on a parchment-lined baking sheet. The parchment keeps the cookies from sticking to the pan. Let them harden. If you want to drizzle on a little extra chocolate, go for it.

    Mint Chocolate-Covered Ritz Cookies

    Ingredients

    • 16 ounces dark candy coatings, see note
    • 1/2 teaspoon peppermint extract
    • 1 teaspoon coconut oil or vegetable oil, if needed
    • About 48 Ritz-style crackers

    Instructions

    1. Melt the dark candy coatings.

      Microwave directions: place candy coatings or chocolate in a 2 cup measuring cup. Heat on low for 20 seconds. Remove from the microwave and stir. This prevents the coatings from burning. Repeat until melted. Do not overheat or candy melts will get thick.

      Double Boiler Directions: Place candy coatings in the top of a double boiler. Heat, stirring occasionally until the coatings are melted. Do not overheat or candy melts will get thick.

    2. Add peppermint extract. Stir to combine. If the melted coating seems thick, add coconut oil.
    3. Dip Ritz crackers into the coating. Remove the crackers from the coating with a fork. Tap the fork on the side of the bowl to remove excess coatings.
    4. Place the dipped coating onto a parchment-lined baking sheet. The parchment keeps the crackers from sticking to the pan.

      Optional: drizzle extra coating onto the cookies after the coating sets.

    Recipe Notes

    Note: Candy coatings are made to melt and use. They do not require tempering. You can use a pound of dark chocolate. To help the dark chocolate set without tempering, add two teaspoons coconut oil.
