- Use 100% Pure Pumpkin Puree. Use 100% pure pumpkin, not canned pumpkin pie filling. This is sometimes labeled “pumpkin puree.”
- Don’t overmix the batter. Mix the batter until it’s smooth and thick. You don’t want to beat air into it or the pie can crack as it bakes.
- Wiggle it. Just a little bit. To check for doneness, give the pan a little wiggle. Look for the filling to jiggle slightly. The pie finishes baking as it cools.

Instructions
Make the Gingersnap Crust

In the bowl of a food processor, combine the gingersnaps with the sugar. Pulse into fine crumbs. Stir in the melted butter; mix until combined. Press the mixture into a 9-inch pie pan.
