This recipe requires just four ingredients and only about five minutes to prepare per batch. It’s perfect for making repeatedly throughout the summer!
Ingredients
This recipe keeps it simple. Here’s what you need to make a batch.
- Graham Cereal. The “s’mores” flavor comes from graham cereal. For this recipe, I use Golden Grahams. I’ve tried all the generic brands and think the flavor of Golden Grahams is the best.
- Marshmallows. Melted marshmallows hold the bars together and mini marshmallows are stirred in along with the cereal for extra flavor and texture.
- Chocolate. I think milk chocolate is a must for anything s’more.
- Butter. Adds richness and flavor. I like to use salted butter. It goes great with the sweetness of the bars.
Ingredient Notes
- Use fresh cereal and marshmallows. If either are stale, the bars won’t taste as good.
- You need 12 ounces (about 8 cups) total marshmallows.
- I’ve made this recipe with vanilla extract and without. My verdict: it doesn’t need it. But if you love vanilla, go ahead and add 1 teaspoon.
Let’s Make S’More Bars!
If you’ve ever made crispy treat bars, the steps will look familiar to you!
- Start by melting the butter over low heat in a large pan.
- Add the bag (6 cups) of marshmallows. Stir until they’re creamy and melted. If you melt the marshmallows over low they, the bars stay soft. If you like a crunchy bar, use high heat.
- Remove the pan from the heat. You don’t want the marshmallows to continue to cook. Add the cereal.
- Stir until all the cereal is coated with marshmallow.
- Add the extra mini-marshmallows and chocolate. Stir quickly to combine. If you go slow, the chocolate melts.
- Gently press the cereal mixture into the prepared pan. If you pack it down, the cereal crushes and the bars get hard.
- Let the bars cool on the counter or pop them into the fridge. Cut into bars and enjoy!
Storing Leftovers
These bars are rich. So unless you’re making them for a big group, you might have some leftovers. The good news? They keep really well!
Store the leftover bars covered at room temperature or in the fridge. Keeping them in the refrigerator keeps them firm.
I don’t recommend freezing cereal bars. The texture of the cereal gets soft after the bars thaw.
Pan coated with marshmallows? It’s easy to clean!
After you make a batch, you’re rewarded with yummy bars and…a sticky marshmallow coated pan. Thankfully, the pot is easy to clean! Just soak it!
Fill your pot with water and let it sit. After an hour or so, the sugar dissolves and the pot is easy to clean.
In a rush? Fill the pot with warm water and bring it to a boil. This speeds up the process!
Golden Grahams S’Mores Bars
Ingredients
- 6 tablespoons butter, salted recommended (3 ounces; 85 grams)
- 1 (10-ounce) bag marshmallows (6 cups)
- 8 cups graham cereal (about 11 ounces; 311 grams)
- 2 cups mini marshmallows (4 ounces; 113 grams)
- ½ cup chopped milk chocolate (2 ½ ounces; 70 grams)
Instructions

Line an 8″-x-8″ pan with parchment paper or butter it generously.

Melt butter in a large pot over medium-low heat. Add the bag (6 cups) of marshmallows. Stir until the marshmallows are melted.

Remove the pan from the heat. Add the graham cereal. Stir gently to combine. Add the additional 2 cups marshmallows and chopped chocolate. Stir quickly to combine. (If you stir for too long, the chocolate will melt. The bars still taste great!)

Press the mixture gently into the prepared pan with a piece of greased parchment paper or your hands. If using your hands, grease them lightly or the cereal mixture will stick.

Let the bars cool. You can do this at room temperature or in the refrigerator. Cut into bars. Enjoy!

Store the bars covered at room temperature for up to four days. For firmer bars, store covered in the refrigerator.
