Inspired by classic beef tacos, these tasty bowls are made with ground beef, black beans, rice, and salsa. They’re loaded with flavor and only take 10 minutes to cook in the Instant Pot.
Instant Pot Taco Bowls: The Ingredients
The Meat
Inspired by classic ground beef tacos, this recipe calls for lean ground beef. Don’t want to use ground beef? No problem! Use ground turkey instead. (Want a chicken-based bowl? Use this recipe for Instant Pot Chicken Burrito Bowls!)
The Rice
Like my original burrito bowls, this recipe calls for long-grain white rice. Don’t replace it with either instant rice (you’ll get mushy rice) or brown rice (the brown rice won’t cook in five minutes).
The Broth
Use low sodium or no-sodium chicken broth. My favorite is Kitchen Basics. Some folks ask why I suggest a low sodium broth when I call for adding salt to the recipe. It’s all about control. You get to control how much salt you add instead of leaving that up to the broth manufacturer. And if you make homemade chicken stock, you can use it in this recipe! Simply replace the broth with your stock.
The Spices
Chili powder brings a lot of flavor without bringing a lot of heat to this recipe. Skip those packets of “taco seasoning”. They contain both salt and a thickener which adds an odd consistency to this recipe. I used Penzey’s regular chili powder. It’s loaded with flavor but not a lot of heat.
If you want to add a spicy kick to the recipe, add a little chipotle powder or, for a really spicy kick, add a pinch of cayenne pepper.
The Salsa
For this recipe, I use the same Chi-Chi’s salsa as I did in my chicken burrito bowls. It’s a simple salsa that adds lots of flavor. Use whatever salsa you love. Just note, however, that if the salsa you use is thin, it can make the rice mushy.
The Beans
You’ll notice the recipe calls for canned black beans. Some folks wonder why I use canned beans in a pressure cooker recipe. The answer is simple: cook time. Dried black beans would take too long to cook and the rice and meat would be overcooked by the time the beans were done.
The Corn
Frozen corn adds a nice flavor and texture to these bowls. If you follow a corn-free diet, skip the corn. It won’t impact the final recipe at all.
How to Make Instant Pot Taco Bowls
- Cook and Drain the Ground Beef. Use the saute setting to brown the meat right in your pressure cooker. Drain any excess fat from the pot. (Using grease strainer is the easiest way to do this.)
- Saute the onions, garlic, and spices. Cook the onions and garlic for about two minutes. This step removes the sharpness from the onions and garlic. It’s an important one. Don’t skip it.
- Deglaze the pot. To avoid getting a “burn” notice, add about 1/4 cup of chicken broth to the pot after you cook the onions. Using a wooden spoon, scrape the bottom of the pot to remove any cooked-on bits of meat or onions. Once you’ve scraped the bottom of the pot, go ahead and add the remaining ingredients.
- Cook on high pressure. This recipe requires only 10 minutes under pressure. The pot takes several minutes to reach pressure. So plan on about 30 minutes from start to finish.
What to Serve with Taco Bowls
- Shredded lettuce
- Diced avocado
- Sour cream
- Minced red onions
- Thinly sliced green onions.
- Shredded cheese, such as Cheddar, Monterey Jack, or Pepper Jack.
- Tortilla chips
- Sliced black olives
- Salsa
- Finely chopped cilantro

Ingredients
- 1 tablespoon olive oil
- 1 pound lean ground beef or ground turkey
- 1 small onion, finely diced
- 1 clove garlic minced or put through a garlic press
- 1 1/2 cups chicken broth, low or no salt added
- 2 teaspoons chili powder I used Penzey's Regular Chili Powder
- 1/2 teaspoon Kosher salt
- 1 (15.5 ounce) can black beans, rinsed (preferably low or no salt added)
- 1 cup long grain white rice uncooked
- 1 cup salsa I used Chi-Chi's Thick and Chunky Medium Salsa
- 1 cup frozen or canned corn
Topping Suggestions
- grated cheese
- shredded lettuce
- sour cream
- salsa
- black olives
- tortilla chips
Instructions

Set electric pressure cooker to the high saute setting. Heat olive oil until it shimmers but doesn't smoke. Add the ground beef. Cook, breaking up meat as it cooks until no pink spots remain. Drain excess fat.

Add the onion and cook until soft, about two minutes. Add the garlic and cook an additional minute. Turn off the saute setting. Add 1/4 cup of the chicken broth. Deglaze the bottom of the pot, scraping off any cooked on bits of beef or onions/garlic with a wooden spoon.

Add chili powder and salt. Stir to combine. Add black beans, rice, salsa, and corn. Stir. Pour remaining chicken broth over the mixture. Stir to combine.

Lock the lid in place. Set a 10-minute cook time on high pressure.

Once the cook time completes, quickly release the pressure.

Open the lid away from your face. Stir with a wooden spoon or rubber spatula.

Serve with your preferred toppings.

Two teaspoons of chili powder is usually pretty mild. What brand did you use? For example, chili recipes use a tablespoon or more. So it’s unusual that 2 teaspoons would be strong.

I followed the directions, but i recieved the BURN notification on my instant pot. I emptied it out, scrubbed the pot, added 3 more cups of broth and it burned again. Anyone else have this problem?

The dreaded IP burn notice. Argh! I’m sorry this happened to you. It’s annoying and a waste of both your time and ingredients. I wish I had an answer for you. It seems to be a quirk of some models. Some folks have said that specific layering of the ingredients helps but other, after doing this, still experience the problem.
May I ask what model and size IP you have?

I make this pretty regularly. The original recipe is AMAZING! I’ve added a bit more corn and 1tsp of Cholula chipotle, plus added 3 extra minutes of cook time in later gos at the behest of family members. I just didn’t have luck with the rice being completely done at 10 minutes. Even the picky eaters LOVE it! Thank you!

If you plan ahead you can use dried beans and brown rice by cooking them ahead of time so they only need reheating in the recipe. I believe if you cook 2 cups (maybe only one?) of dried beans that’s equal to a 16 ounce can. I always keep about that much in a jar in the fridge.

I added an extra 1/2 cup of broth because I used brown rice. Then added 6 minutes to the time as well. It was delicious. Definitely will make it again!
