These Easter crispy treats are made with marshmallow chicks! Making them is almost as fun as eating them. Almost.

The humble marshmallow chick is a surprisingly controversial Easter candy. Like candy corn at Halloween, there’s not much middle ground. People either love them or hate them. Personally, I’m a fan. Fresh? Absolutely. Stale? Yes, please! Turned into crispy treats? Don’t mind if I do.
If you’re using the classic chick, the flavor is similar to regular marshmallow treats. But these days, they come in a dizzying array of flavors, so feel free to mix it up. Use whatever sounds good to you. They all work!
Ingredient Notes
- You can use salted or unsalted butter.
- Marshmallow chicks or rabbits work.
- Use soft marshmallow chicks. If they’re dried out, they don’t melt easily.
- Peep the size of the package. They sell marshmallow chicks in different sizes. You need six ounces for the recipe. As of this writing, that’s two standard packages.
- Since the packages, like many things, have gotten smaller over the years, this recipe makes a small batch of treats. If you’d like a larger batch, double the recipe and press the mixture into an 8×8-inch pan.
How to Make Easter Crispy Treats
These are so fun to make! They’re ridiculously easy. (And somehow delightful melting those marshmallow chicks into a pretty goo.)
- Melt the butter and add the marshmallow chicks (or bunnies) over low heat.
- Stir until the marshmallows are almost melted. If one or two lumps of soft marshmallows remain, that’s fine.
- Remove the pan from the heat. Add the crispy cereal.
- Stir gently until all the cereal is coated.
- Press the mixture into a 9×5-loaf pan.

Ingredients
- 2 tablespoons butter (1 ounce; 28 grams)
- 6 ounces (20 pieces) marshmallow chicks or rabbits
- 3 cups crispy rice cereal (3 ounces; 85 grams)
Instructions

Prepare your pan. Grease a 9×5-inch loaf pan with nonstick cooking spray. (I also line it with parchment. That’s optional but makes it easy to remove)

In a medium pot, melt the butter over low heat.

Add the marshmallow chicks. Stir until marshmallows are almost melted. Keep the heat low.

Remove the pot from the heat and stir in the crispy rice cereal until coated.

Gently press the mixture into the prepared pan.

Allow the bars to set for an hour or so and then cut into bars.

Cover any leftovers and store at room temperature.
